Detoxifying Raw Beet, Fennel and Carrot Salad


When I take a bite of this salad, I feel an immediate zing of energy move through my entire system and it’s as though all of my sensory receptors are opened and cleansed instantly. I see and feel the rainbow colors of this dish lighting up within me.


My first contact with this recipe was many years ago when I was doing an Ayurvedic Spring Cleanse with Ayurvedic Practitioner,  Anne Allen. This salad is so vibrant and full of vitality and you feel that vibrancy and vitality when you eat it from your taste buds down to your cellular level. It is very easy to make if you have a food processor, and if you don’t, a box grater will make the work quick.


This fresh salad for Spring is fantastic for detoxing and cleansing the lymphatic system. A strong and clear running lymphatic system means a more resilient and responsive immune system. The body is optimally designed to detoxify itself. However, our highly stressful and busy lives have placed additional stressors on the body which can impair this process. We are in constant communication with the Web of Life, with our hearts, souls and bodies. We communicate with our bodies about the state of our lives through what we eat, the level of stress in our daily schedule and these factors find expression in our bodies.


I always serve this dish at our Spring celebrations. For me, it is the embodiment of the energies of Rebirth and Vitality that I feel at that time of the year. As the moon is growing into fullness, you can tap into these energies of rebirth and growth.




Detoxifying Spring Salad


1 beet - shredded

2 carrots- shredded

1 Apple - shredded

1 fennel bulb - sliced

1 celery - sliced


1 inch of ginger, grated

2 limes, juiced

Pinch of Salt

Tbs of Honey

2-3 tbs of Olive oil or Avocado oil

With a food processor, individually grate the beets, carrots and apple, placing them into a large bowl. Slice the fennel and celery.

To make the dressing, place the ginger, lime juice, honey and salt in the bowl of the food processor. Process and add the oil while it’s on.

Pour the dressing over the salad and stir well. Allow an hour for the flavors to combine.
